Well here goes my second installment of Aunt Daisy's recipe's. Another basic one that I did while on my (our) honeymoon at Waiheke!
PANCAKES!
Hubby and I got a craving for the things after I was trying to remind him about pancake day when we were back in London. Seems like it was something I experienced but he didn't. Its a bit of a thing over there - being from a non-religious background it was new to us but the basic idea was pancakes were used to celebrate Shrove Tuesday which is the day before Ash Wednesday which is the first day of the season of fasting and prayer called Lent. I like learning little bits of information like this. Its all helpful in becoming an excellent trivial persuit player of which I still need plenty of practice, but thats for another ramble!
So ingredients are:
85g flour
1/2 teaspoon salt
1 cup of milk
3 eggs well beaten
a little butter
sugar
lemon juice
Put flour in a basin with salt. Mix gradually with milk, working to a smooth paste (I like to use a whisk and get it really thin). Add eggs.
Heat frying pan to hot (I like to put slightly cooler than this to stop burning), put in enough butter to grease the pan (yes butter people, not margarine or any of that other man made gunk). Pour in batter over bottom of pan. Toss when done underneath (how do you tell its done? I hear you say - look for the bubbles!).
Sprinkle with sugar and drizzle with lemon juice - mmmmm yummy!
Aunt Daisy's tips: serve at once or can become tough. The batter is better if it is stood several hours and just before cooking add 1 teaspoon of baking powder (I tried this last tip and it really did make them much lighter and easier to eat!).
